Nori is at its best for only moments. We toast each sheet to order and roll at the last second, so the seaweed shatters — never softens — against warm rice.

Body temperature, seasoned with aged red vinegar and a breath of salt. Loose, not packed. The quiet foundation everything is built upon.

Sourced for the day, broken down in-house, cut for each roll. From Hokkaido uni to Omi wagyu — nothing sits, nothing waits.
